Tiramisu with a Twist!

What I like about making desserts is not just making them as they are supposed to be, but to mix in different ingredients and try out different combinations. And you will be surprised how a little twist here and there can give you a new experience in that traditional dessert you've always enjoyed.

The typical Tiramisu is made using mascarpone cheese, coffee, rum and a sprinkle of cocoa powder to top off the heavenly combination of delicious ingredients. So the experiment was to use Bailey's instead of rum (I like the taste of Bailey's) and I also added in some almond nuts to the mascarpone cheese to give it a bit of crunch. Tada!! Another yummy yum yum dessert!

Also made it in cups. Now made them in a mini cup version which makes the portion look less sinful than the one shown in my other post on Tiramisu in a Cup.

Tiramisu in a Cup

I made our Tiramisu in a pretty coffee cup. Just the right size for each person to enjoy the dreamy goodness of coffee,chocolate, rum and the creamy mascarpone cheese.....




Mini Jelly Cheesecake

The beautiful Jelly Cheesecake now comes in minis! Like little cupcakes, these minis comes in small portions but filled with the usual goodness of cheese, jelly and fruity fruits.

I like different jelly flavors and fruits:
  • Jelly flavors: raspberry (my favourite), strawberry, lime, peach, Ribena
  • Fruits: Strawberry, blueberry, peach, mango, lychee (the daisy shown in the pic), longan, rum dried cranberries, nata de coco.

Yam Paste with Gingko Nuts and Sweet Corns



Another traditional dessert favored by many. I like this recipe (by my dear mother) because it does not add any oil to it, not like the ones outside which have a layer of oil and makes the whole dessert looks so sinful :P. It's 100% yam, with the nutritious gingko nuts (for your brain!!), sweet corns for a bit of different texture, and the right level of sweetness, not too sweet.

Lemon Cheese Mousse and Mango drizzled with Maple Syrup

My friend tells me that he likes to eat mango together with maple syrup. Hence, I created this little treat with his favourite combi plus the creamy lemon cheese mousse to complete the overall dreamy taste...


I put these delicious little treats comes in a box, pretty and perfect for a picnic out or enjoy with friends together.

Types of Fruit Toppings used: Mango (as seen), strawberry, peach, blueberry, rum-soaked cranberries / raisins.

Cupcakes

Cupcakes seems to be very popular nowadays. Maybe because of the convenience - saves the hassle and mess of cutting cakes (and "disfiguring" the poor cake!!) and each cupcake is just the right size for one person. Mascarpone Cheese Mousse with Rum Cranberries

Another cheese dessert :) Mascarpone cheese taste light and fluffy and cranberries soaked in rum add the little bit of sweetness to complete the overall happy and dancing-on-the-clouds feeling!





Lime Cheese Mousse with Strawberries

I always like cheese in my desserts. I used cream cheese for these mousse and the lime juice makes it perfect for a light after-meal dessert.

Fruit Topping: strawberry, mango, peach, blueberry, rum-soaked cranberries / raisins.

Tiramisu Cake

I always like to make this dessert. Chocolate and coffee just taste heavenly together. The essence of Tiramisu lies in the mascarpone cheese which is a light and fluffy cheese, different from the denser cream cheese usually used in cheesecakes. The taste is also different, with a very creamy milky taste. I put in 2 layers of valrhona cocoa powder which give a very intense chocolatey taste to this dreamy dessert..


And yes, you can always makes it with a strong or mild alcohol taste or even no alcohol. I use kahlua or dark rum.

P.S. I nearly got drunk by my own tiramisu once......

Jelly Cheesecake

I modified the recipe I got from the internet on the famous JellyHearts, the delightful little treats with a biscuit base, cheese layer and a top jelly layer. I also put in some pretty designs in the jelly using fruits. The cheese I use is Kraft Philadelphia cream cheese which still gives the best taste so far. I made these delicious art works are available in sizes 6x6", 8x8" and 10x10".

I like to use these jelly flavors and fruits:
  • Jelly flavors: raspberry(red), strawberry(red), peach(orange), mixed berries(blue), lime(green), Ribena (yes, the blackcurrant drink we so loved. Try it on your cheesecake!)
  • Fruits: strawberry, peach, mango, blueberry (or others).
I also like to do special designs with themes (not limited to the ones you see here). Each cake to me is like a piece of artwork from my heart and special to me (and you too ;)) and I usually do not like repeat my designs (unless requested), which means every single cake is the one and only piece in the world!
